Ingredients

8 ounces penne pasta
1 pound chicken, cut into 1-inch pieces
3 tablespoons olive oil, divided
1 medium onion, diced
1 orange bell pepper, cut in 1-inch pieces
6 ounces spinach
2 cups chicken broth
1 tablespoon tomato paste
1 cup half and half
1/2 cup grated Parmesan
1-2 tablespoon Zestify Tuscan Brio seasoning Add To Cart

Instructions

1. Bring a large pot of water to a boil, and cook pasta to al dente.
2. Season both sides of the chicken with the 2 tablespoons of the seasoning. Cook at medium heat with 2 tablespoons of olive oil for about 8 minutes or until the chicken reaches an internal temperature of 165℉. Set aside.
3. Add remaining oil and saute vegetables for 5-7 minutes, until softened. Set aside.
4. Whisk in the tomato paste and chicken broth, then the half and half. Bring to a simmer for 5 minutes.
5. Stir in the cheese and remaining seasoning.
6. Add all ingredients into the sauce and mix completely.
