Ingredients

1 large sweet potato, peeled and diced
4 cups vegetable broth
2 tablespoons olive oil
1 (15 oz) can black beans
1 (15 oz) can diced tomatoes
1 medium onion, chopped
4 cloves garlic, minced

Instructions

1. In a large pot, heat the oil over medium heat.
2. Sauté the onion and sweet potato until the onion begins to soften.
3. Add the seasoning and stir for another minute.
4. Add the broth. Bring to a boil and then simmer for 15 minutes.
5. Add the tomato and black beans and simmer another 10-15 minutes.
6. Add water or salt if needed.
