
Ingredients
1 tablespoon olive oil
1 large onion, diced
3 garlic cloves, minced
2 medium carrots, chopped
1 medium zucchini, chopped
1 can diced tomatoes
1 can chickpeas, drained and rinsed
3 cups vegetable broth
1-2 handfuls chopped kale (optional)
1 packet Zestify Savory Souk seasoning Add To Cart
Instructions
1. In a large pot or Dutch oven, sauté onions and carrots in oil over medium heat. Add garlic and sauté another minute.
2. Add broth, tomatoes, chickpeas, and seasoning and bring to a boil then reduce heat, add zucchini, and simmer uncovered for 20 minutes.
3. If adding kale, stir in at the end just before serving.
